Tonight, I'm taking a break from leftover Indian food to eat ... some different leftovers! I was feeling a little under the weather last week (in a way that mostly just made me super tired all day and not so much sick), and all I wanted to eat was soup. You might recall that I have a hundred cookbooks or so, and you might think that I would turn to any of them to get a feel-good-soup recipe. But I try to keep the mystery alive by doing the unexpected. In my sleepy haze, I decided to just wing it. Here's a picture of my soup. Take a moment to think about what might be in there before you scroll down for the rest of the story.

Okay, enough suspense. I have a (so far) foolproof method for making comforting soup when you don't want to think about it: Pull all the best vegetables out of your fridge. Scrub those veggies. Roughly chop them. Dump them in a pot with a good bit of water or broth. Bring to a boil and then simmer for a long, long time. Cook it until everything is soft. Now comes the magic: blend that shiz. Blend it good. If you have an immersion blender, this is the time to bust it out. I've followed this exact method with countless combinations of vegetables, and it's really never been bad. The soup you see above has in it: potatoes, bell peppers, beets, onion, broccoli, carrots, celery, garlic, zucchini, spinach, and black and pinto beans. I may have also thrown in the kitchen sink ... it's hard to say. It was pure luck that it blended into that fantastic color. It's okay to be amazed, but try to not drool on your shirt.

This is my kind of cooking. And anything with beets ends up this awesome color. I'd be lying if I said that wasn't part of the reason I love them.
